Bikini

Serves 10 servings

Ingredients for the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Cocktail (makes 850ml, enough for 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing

Directions

For the Citrus Syrup: Put the listed items inside a pot, bring to a light boil, stirring until the sugar dissolves. After that, turn off the heat and leave to cool entirely. Pour into a sterilised bottle, close it and store in the refrigerator, where it will keep for around four weeks.

Preparing the Cocktail Base: Pour all the liquid ingredients in a large bottle, leave to sit for 60 minutes, then pass it through preferably using cheesecloth, to ensure it's fully clarified.

For serving: Pour 85ml of the premix into a cocktail shaker filled with ice, gently stirring carefully for a minute to cool it down. Pour to a chilled martini glass or similar, decorate with the cranberries and finish with a light spray of mandarin oil over the drink.
